Lettuce
General Tips

Always rinse salad greens and lettuce under cold water to remove dirt, chemicals and insects; as well, always dry them well to keep them crisp when serving

Core iceberg lettuce by holding the head core-side down over a counter, then striking the core against it; pull gently, and core will come out

Never cut lettuce leaves; rather, tear them to prevent browning edges
-
To speed up dish preparation and ensure convenience, buy pre-packaged, pre-washed mesclun and lettuce mix, or make your own and refrigerate until use

If using lettuce in salads, remember to always add dressing just before serving
