Cucumbers

General Tips

  • To reap all the nutritional benefits contained within cucumbers' skin, they are best used unpeeled; only peel them if their skin has been waxed, and use a vegetable peeler
  • Cut off and discard an inch from both ends of cucumbers, as those parts are usually bitter
  • The more mature the cucumber, the bigger and bitter its seeds; remove them by cutting the cucumber lengthwise, then dragging a spoon through the middle
