General Tips

  • To keep diced or sliced apples from turning colour, toss with lemon or apple juice, or dip in acidulated water
  • Use an apple corer or slicer to get perfectly even slices; peel with a vegetable peeler, taking care to remove as little flesh as possible
  • Freeze apple slices for pie fillings and sauces with a little ascorbic powder, water, and sugar; pack and keep frozen for up to a year
  • Thaw frozen apples for one hour before using
